Curry cream soup



2 onions
3 apples
1/2 pineapple
2 pears
3 bars of lemongrass
2 lime leaves
2 tbsp curry powder
1 tbsp yellow curry paste
1 liter of stock / vegetable stock
2 tbsp coconut milk / coconut paste

Peel the onions and cut into small cubes. Remove from the lemongrass the withered outer leaves and the upper, dry half, pound the lower half with a meat tenderizer. Now sauté the onions and lemongrass together with the lime leaves in butter. Then add the finely chopped apples, pineapple and pears and sauté. Mix the whole with the curry powder and the curry paste and deglaze with the stock, then add the coconut milk to refine, puree everything together and season with salt, pepper. Finally pass everything (by stroking a sieve or pressing through a cloth).
