Ratatouille of asparagus with baguette



1 kg asparagus
600 g of zucchini
1 kg red and yellow peppers
300 g of tomatoes
4 cloves of garlic
400 g onions
4 tablespoons olive oil
1 tsp of sugar

Peel the onion and cut into cubes of approx. 1cm. Peel the garlic and finely dice. Then wash the asparagus and cut off the woody ends. Then peel and cut diagonally about 5 cm long pieces. Wash the zuccini and quarter it lengthwise and cut into pieces about 2cm wide. Wash the peppers, halve and core, then cut into cubes of about 2 cm. Also wash the tomatoes, cut in half and chop roughly.

Heat some oil in a larger saucepan, add onions, garlic an sauté for about 10 minutes while stirring. Now add the prepared vegetables and season with herbs, the tomato paste, salt, sugar and pepper to taste. Then cook everything for about 15-20 minutes with the lid closed. Then remove from the heat and let it strain for another 10 minutes. Stir again and season with salt and pepper again. Together with the sliced ​​baguette can now be served!
